Kombucha is brewed through a two stage fermentation process:
Stage One uses a 'symbiotic culture of bacteria and yeast' also known affectionately as 'SCOBY'.
It is the mother SCOBY which feeds off the tea and transforms the brew into a natural super brew, living probiotic tea which provides many health benefits and a natural energy boost.
Stage Two is where the living tea really comes to life with the organic natural real fruit goodness which is added and rested for a short time. This is where the original and delicious Yin-Yang flavours come to life and create your favourite effervescent beverage.
At Yin-Yang we try to support our local organic farmers as much as possible and we only use the freshest local organic fruits when available to create the highest quality 100% natural kombucha.
The two part fermentation process keeps alcohol levels to a minimum with less than 0.5% alcohol.
